This banana bread recipe is a favourite in our family. It is enjoying by adults and children of all ages.
It also freezes very well, so it is very user friendly--which we all need with a busy life. Just pull out of the freezer the night before you want to enjoy, and you will wake up to delicious banana bread!!
Start by pre-heating your oven to 350.
Prepare your loaf pans by spraying with non-stick cooking spray
Ingredients
3 ripe bananas
1 cup of white sugar
1/2 cup vegetable oil
2 eggs
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
couple splashes of orange juice (optional)
chocolate chips (or any add ins you'd like)
Directions
In a big bowl, mash or with an electric mixer, mix up your bananas.
Add in sugar and oil, mix together.
Add eggs, mix well.
Add in flour, baking soda, baking powder and salt. mix well to combine. This is where you can now add a couple splashes of orange juice, if you'd like to.
Next, mix in your chocolate chips. I use milk chocolate, and from time to time I also add in white chocolate chips. You can add pecans, or anything else you fancy.
Pour evenly into two greased loaf pans.
Bake for 45-55 minutes, depends on your oven. Check at 45, place a toothpick in the center, if it comes out clean the banana bread is ready!
Place on a cooking rack. If freezing banana bread, let it cool completely before placing in the freezer.
Slice up and enjoy!
